Happy St. Patrick's Day

I admit it--I really like making cute little treats for holidays.  I've made my groundhog's day cupcakes for the kids' classes the last two years.  I think it goes along with my love of cake decorating--but on a much more manageable, less time consuming, scale.  As with just about everything I make, I pretty much copy the ideas from someone else, but it isn't easy finding the right idea to copy--sometimes I have spent hours on google.

When I saw directions for these St. Patrick's Day treats I just had to make them.
They were pretty fun and easy to make.  I have to admit that the sugar cookies were not as good as they should be.  Since my kitchen is just getting put back together after the remodel and I am in the middle of helping to sew 29 cheerleader outfits (don't ask) in the next two weeks--making the sugar cookies from scratch just wasn't going to happen....so I did something I thought I would never do--bought premade dough from the grocery store and baked it....now I know why I would never do it (beside the fact it cost me as much for 24 cookies as I could make 6 dozen for at home), the cookies were thin and crispy and don't look that appealing at all.

Of course, once they are topped with marshmallows, covered in green frosting, and have tootsie roll and gumdrop accents, I'm sure no one will be able to detect the taste or texture of the cookie anyway!

I did have a lot of fun and I will make them again next year--maybe take them into the kids classes as well.
