Happy Groundhogs Day!

I don't know why I've always loved groundhogs day--maybe because it meant my birthday was almost here--but I decided to make some cupcakes for the kids' school classes this year--the teachers said they were taking about predictions and would love the cupcakes (with a bonus that they are completely nut allergy free so all the kids can have them).

It didn't take too much time--44 cupcakes is a lot to make though! Caroline helped me put the eyes and nose on the groundhogs. I thought they turned out cute--Caroline said they looked "like groundhog robots--you know, how robots never really look like the thing they are supposed to be??" So I asked her how much experience she had looking at groundhogs :) I guess that is what I get for asking!

The head is made from chocolate marshmallow fondant. It is on my recipe blog: http://urbanfamilyrecipes.blogspot.com/2010/02/easy-chocolate-mmf.html

really wish I would have been more on top of things... I so would have copied you! My kids for some strange reason LOVE ground hogs day. Me, i'm convinced it's a mean trick. I mean, the thing sees his shadow EVERY YEAR! Anyway, I'll have to put this one in for next year!
