I'm not sure why I love groundhog's day, but I have a feeling it stems from when I was little and knowing that my birthday was just around the corner. Regardless, a few years ago I saw an idea for groundhogs day cupcakes so it is now a tradition to make them for all of the kids' school classes.
The heads and teeth are made from fondant and the nose and eyes are from chocolate chips The frosting is the snow and I use crumbs from the leveled off cupcakes to make the dirt.
I made all the groundhog heads 2 days before, but the night before I was faced with a daunting task of frosting and assembling all the cupcakes--luckily Caroline and Carter came to my rescue and Caroline put the frosting on while Carter put the heads on and sprinkled the crumbs for dirt. I leveled the cupcakes and put them in pans to deliver the right number to each class.
This year we did 78 cupcakes! Hopefully my numbers will go down next year!
